The Big Black Dog is Under New Management

The Big Black Dog Tavern and Grill in Wilmette is under new management, with a new front-of-house manager and a new head chef. 

Ryan Serafini is taking over as new head chef, with Sean Driscoll stepping into the front-of-house manager roll. 

Driscoll, a 2001 New Trier graduate, worked his way up, starting at Big Black Dog in October. 

"[This job] is a lot of fun," he said. "You get to help people and provide a great experience," Driscoll, who said his favorite item on the menu is the pulled pork, said. 

Serafini has added multiple new items to the menu when he took over, including a stuffed jalapeño burger and smoked buffalo wings. 

"We just needed to step it up after being in business for six or seven months," owner Chuck Rometty said.

Rometty also owns Gilson's, a restaurant across the street, and splits his time between the two restaurants. 

"I did have a gray hair before I started this," he joked. "It's very challenging but very rewarding [owning two restaurants]. If I didn't have this great group of people, I couldn't accomplish anything."
